Documents carry their history with them. A PDF built from a colleague's template still names that colleague as the author. A contract exported from an internal system records the system. The text stays selectable, images keep their resolution, and page count and formatting are exactly as they were. Only the properties attached to the file are emptied.

The usual reasons are professional rather than paranoid: sending a proposal without advertising which client's template it started from, publishing a document without naming the junior who assembled it, or filing something where the internal revision history is nobody else's business. Because the file is processed in your browser it is never uploaded, which matters for exactly the sort of document that is worth cleaning in the first place.
